Protein Powder-less Smoothie / Overnight Oats (vg)


I always use protein powder in my breakfast, less so because of the protein itself, but more because I actually love the taste and texture. But not everyone does! So, whilst it may seem strange, using silken tofu in your smoothie / overnight oats can be an incredible substitute for protein powder, all whist giving the food an unbelievable creamy, silky smooth mouthfeel.

Serves: 1 | Total Cooking Time: 20 minutes

Ingredients

  • 1 ripe banana

  • 100g silken tofu

  • 100ml unsweetened plant based milk of choice

  • 1 level tbsp (roughly 10g) cacao powder

  • 1 tbsp (roughly 15g) smooth peanut butter

  • 50g jumbo oats (optional for overnight oats)

Instructions

  1. Place all of the ingredients into a blender and blitz until smooth. If having a smoothie, feel free to throw in some ice cubes to make it lovely and fresh to consume straight away. If having overnight oats, simply leave in the fridge overnight to thicken up.
