Vegan Birthday Cake Baked Oats


From taste to texture, this healthy - yes healthy! - vegan breakfast/snack idea tastes exactly like raw vanilla funfetti cake. Packed with fibre, plant protein, vitamins & minerals, and heart healthy fats, this is probably up their with not only the healthiest cake batter you’ve ever had, but the most delicious and comforting breakfast you’ve ever blessed you’re tired morning tastes buds with.

Serves: 1 | Total Cooking Time: 20 minutes

Ingredients

  • 1/1 ripe banana

  • 15g vegan vanilla protein powder (linked is the one I use Code ‘VEGAMBS’ will also get you 10% off sitewide)

  • 100 - 125ml unsweetened almond, oat or cashew milk

  • 10-15g smooth almond butter

  • 50g jumbo oats

  • 1/4 tsp almond extract

  • Sprinkles

Instructions

  1. Preheat your oven to 180ºC, fan.

  2. Place all of the ingredients, except for the sprinkles, into a blender and blitz until smooth.

  3. Transfer the mixture into a heatproof dish and bake for 15-20 mins, or until cooked through the centre (the cooking time will depending on the depth of the dish and sometimes your oven, so I recommend checking your oats periodically).

  4. Remove from the oven and allow to cool for 2-3 mins, then dig in and enjoy. You can also batch prep this and leave in the fridge for 4-5 days, and can be enjoyed cold!
