Vegan Salted Caramel Smoothie / Overnight Oats


This smoothie may be fighting with my OG chunky monkey smoothie for the top spot of being my all-time favourite smoothie (that’s really saying something). Born from a weird idea of combining my love for miso and lack-of-will-power for anything salted caramel, this smoothie is simply a dream come to life, and it really couldn’t have turned out any better. Made with the natural caramel of the plant world: sweet, creamy Medjool dates, and the queen of deep flavour and salty pre- and probiotics: miso paste. Whip these together with some creamy tahini, plant milk, and a touch of vanilla, and you my friend, have a damn good drink to guzzle.

Serves: 1 | Total Cooking Time: 5 minutes

Base Ingredients

  • 40g (roughly 3) Medjool dates, pitted**

  • 5g light tahini (1 level tsp)

  • 1 level tsp brown or white miso paste (not the runny kind!)

  • 15g vegan vanilla or slated caramel protein powder (linked is the one I use. Code ‘VEGAMBS’ will also get you 10% off sitewide)

  • Unsweetened plant-based milk of choice* (see notes for quantity)

To make overnight oats

  • 50g Jumbo oats

  • (optional) 1 tbsp flaxseeds or chia seeds

Optional nutritional extras:

  • 1 scoop creatine

Notes

*if making a smoothie, then start by having 200 ml milk and building up until you reach your desired consistency. If having overnight oats, then have 125ml milk.

**if your dates are hard then pre soak them in some warm water for 5-10 minutes to help soften them and ease up the pressure on the blender

Instructions

  1. Place all the ingredients into a blender and blitz until smooth.

  2. If making a smoothie then simply drink up and enjoy! If making overnight oats, then place in the fridge overnight in a fastened jar and allow it to thicken. Open it up in the morning and enjoy!
