Vegan Christmas Pudding Overnight Oats


Christmas is all about the dinner and dessert, but what about the breakfast?! These Christmas pudding-shaped overnight oats are so simple to make, but look absolutely adorable and are sure to impress whomever you serve them up to (or you could just make them for yourself and be a big kid, like me).

Serves: 1 | Total Cooking Time: 10 minutes + Overnight

Ingredients

Decorate with:

  • Vegan yoghurt (or white chocolate)

  • Pumpkin seeds

  • Raspberries or cranberries/raisins

Notes

*you could also use vanilla flavoured protein here, or maybe even chocolate, but I personally prefer unflavoured as its not too overpowering or sweet.

Instructions

  1. On a plate, mash up your banana with the back of a fork until relatively smooth.

  2. Place the mashed banana, along with all of the other base ingredients, into a small bowl and mix together until well combined and thick.

  3. Transfer the mixture into a dome-shaped mini tapas bowl and squish it down using your spoon as much as possible so that it is tightly compact. Then smooth over the top with the back of the spoon, cover, and place in the fridge overnight.

  4. In the morning, carefully insert a butter knife or spoon around the edges of the bowl, to prise the oat-dome away from the bowl, allowing it to flop out onto a plate when tipped upside down. TIP: If you struggle with this, next time try laying some parchment paper or tin foil in the bowl before placing the oats in it - then in the morning, you can simply pull on the paper or foil and slide the oat-dome out.

  5. Smooth over any uneven surfaces of your oat-dome with a spoon and then - the fun part - decorate! I used vegan yoghurt to create the ‘icing’, and topped with some raspberries and pumpkin seeds. But you could use melted white chocolate, or raisins/ cranberries here too.
