Vegan Double Chocolate Overnight Oats
When chocolate oats aren’t enough, put chocolate on top too! These overnight oats are the perfect mix between a healthy breakfast and an indulgent chocolate dessert. Thick & creamy oats, topped with a rich, silky and saucy chocolate blanket.

Serves: 1 | Total Cooking Time: 5 minutes + overnight
Ingredients
50g oats, gluten free as needed
2 tsp ground milled flaxseeds
70ml plant milk of choice (I like unsweetened almond, oat, or soya milk)
1/2 banana
1 tbsp vegan greek-style yoghurt (optional)
1 tbsp vegan vanilla protein powder (optional; but if you do opt for this, you may need some extra milk to prevent your oats from being too dry), (linked is the one I use. Code ‘VEGAMBS’ will also get you 10% off sitewide)
Chocolate Ganache:
1 tbsp maple or date syrup
2 level tbsp raw cacao powder
2 tsp plant-based milk
Instructions
Make your chocolate ganache by mixing all the ganache ingredients in a small bowl or cup. Be patient when mixing; it might seem like it’s not coming together, but it will! If you want your ganache a little runnier, just add more tsp’s of milk in increments.
Mash your banana on a plate with the back of a fork.
Place your oats, flax seeds, plant-based milk, mashed banana, protein powder and greek-style yoghurt (if using) and HALF the chocolate ganache into a jar or small bowl and mix to make your overnight oat mixture.
Pour your remaining chocolate ganache on top of your oats and leave in the fridge to set overnight.
Grab your jar/bowl out the fridge in the morning and dig in!
