Vegan Rudolf Brownie Baked Oats


I cannot put into words how much I love these baked oats. They are honestly just like eating a brownie, it almost feels wrong to have it for breakfast. But do not fear - these oats are made from whole-plant foods and a scoop of protein powder to give it that extra flavour and doughy texture. Plus… how damn cute is the decoration?!

Serves: 1 | Total Cooking Time: 20 - 25 minutes

Ingredients

  • 50g whole oats, gluten free if needed

  • 140ml plant milk of choice (I like unsweetened almond, oat, or soya milk)

  • 15g vegan vanilla protein powder* (linked is the one I use. Code ‘VEGAMBS’ will also get you 10% off sitewide).

  • 1 tbsp milled flaxseeds or chia seeds

  • 30g medjool dates, pitted

  • 1 tbsp cacao powder

Decoration:

  • Vegan pretzels

  • Fresh raspberries

  • Banana slices

  • Vegan chocolate

  • Peanut butter (linked is the brand I use. Code ‘VEGAMBS’ will also get you 10% off sitewide)

Notes

*You can also do half vanilla protein and half unflavoured protein if you prefer a less sweet/overpowering taste

Instructions

  1. Pre-heat the oven to 190ºC, fan

  2. Place all the base ingredients into a small blender and blend until smooth

  3. Pour into an oven proof dish and smooth over with the back of a spoon

  4. Bake for 15 minutes or until cooked through the centre

  5. Remove from the oven and decorate - I used the banana slices for the eyes, topped with some melted vegan chocolate. Then I dolloped some peanut butter for the nose, topped with a raspberry. Then finally dipped some pretzels into some peanut butter and stuck on as ears!

    P.S you can batch prep these and eat them both cold and warm. Just pop them in an airtight container in the fridge, they will stay fresh for 4-5 days. If you do batch prep, however, you may need extra time in the oven as it will take longer to cook through a larger amount. I would also allow them to cool fully before trying to decorate or slice into portions.
