Vegan Tiramisu Weetabix Cheesecake


I may be late to the game, but I stand with the rest of the nation and can personally support how delicious this TikTok-viral recipe is. Even more so because it is so damn easy to make. And yes, it actually does taste like cheesecake.

Serves: 1 | Total Cooking Time: 5 minutes

Ingredients

  • 3 Weetabix biscuits

  • 100ml plant-based milk of choice

  • 1-2 tsp coffee granules or 1-2 shots of espresso

  • 1/2 banana, mashed (optional for a sweeter taste)*

  • 50g plant-based greek yoghurt (I used Oatly Oatgurt)

  • 15g vegan vanilla protein powder (linked is the one I use. Code ‘VEGAMBS’ will also get you 10% off sitewide)

*for a sweeter taste, you could swap banana for a dash of syrup or sugar/sweetener

Instructions

  1. Break up the Weetabix and place in a bowl/jar and pour in the milk, then mix.

  2. If using banana, or sweetener of choice, then ensure the banana is mashed to a puree-like consistency and proceed to mix in.

  3. Finally, add in the espresso shot, or if using coffee, boil some water and place the coffee granules in a small cup. Pour a small amount of hot water into the cup to dissolve the coffee, then continue to add in to the rest of the Weetabix mixture.

  4. In a separate bowl mix the yoghurt and the protein powder until smooth and thick.

  5. Layer the yoghurt ‘cheese’ layer onto the Weetabix layer. Then cover and place in the fridge overnight to thicken. Enjoy in the morning fresh and cold!
