Vegan Tea-Infused No-Waste Pancakes


A twist on my classic banana oat pancakes, which are already a favourite of mine, so to give it an upgrade makes them even more irresistible! Moist and fluffy textures combine with sweet and spicy flavours, as well as utilising the entire banana (even the skin!), makes this pancake stack the ultimate of all pancake stacks!

Serves: 1 | Total Cooking Time: 20 mins

Ingredients

  • 1/2 banana (with the skin!!)

  • 60g oat flour or whole oats

  • 20g vanilla protein powder

  • 1 ginger & turmeric tea bag

  • 125ml unsweetened almond or oat milk

Instructions

  1. Place the milk into a microwaveable mug. Microwave for two minutes & then stir in the tea bag, just as you would in tea, until the bag is completely drained and milk has turned a beautiful yellow colour.

  2. Wash your banana under clean running water thoroughly, then slice roughly into bite sized coins.

  3. Place the infused milk, oats, protein powder, and banana into a blender and blend until smooth.

  4. Heat up a frying pan on medium - high heat & neatly pour the mixture in mini circles or large one, depending on the szie you want your pancakes to be.

  5. Wait a few minutes before flipping over. You will know it’s time when the edges of the pancakes begin to change colour slightly and the surface begins to bubble a little.

  6. Flip over and repeat the cooking time. Transfer onto a plate and enjoy! It’s as easy as that.
