Vegan Banoffee Overnight Oats
Overnight oats are game-changers. Quick and easy to prep, versatile, and an easy way to pack in some really important nutrients before the day has even started. This banana and caramel version is deliciously thick and creamy, sweet and indulgent, but, as always, made from nothing but good-for-you ingredients. Banoffee for breakfast, I'm sure, will make you leap out of bed in the mornings!

Serves: 1 | Total Cooking Time: 10 minutes
Ingredients
50-60g Jumbo oats
1 banana, mashed
1 tsp chia seeds
1 tsp ground flaxseeds
125ml plant-based milk (I used unsweetened soya)
For the date caramel
2-3 very soft, pitted medjool dates
2 tbsp water
Small pinch of salt, if desired.
Instructions
To make the oats, simply mash the banana on a plate with the back of a fork and slide into a bowl or jar along with the oats, chia seeds, flaxseeds and milk. Mix well with a spoon.
To then make the date caramel, simply mash the dates, again, on a plate with the back of a fork until sticky (the dates need to be very soft and creamy - if you use hard ones, it will be hard to turn it into a caramel consistency). Pour over the water and continue to mash until as smooth as can be.
Place the date caramel on top of the oat mixture and top with any topping your desire (if I can give you a tip - granola is one of the best toppings). Place in the fridge overnight to thicken and become gorgeously creamy.
