Chocolate Tiramisu Baked Oats
I’m a sucker for baked oats.. and chocolate.. and coffee. So, naturally, you can probably see why I made this recipe. I also have an Italian boyfriend, so this recipe is either a sign of my love for him or a complete insult (because of course it isn’t actual tiramisu) but it sure is just as good!

Serves: 1 | Total Cooking Time: 20 - 25 minutes
Ingredients
50g oats, gluten free if needed
125ml plant milk of choice (I like unsweetened almond, oat, or soya milk)
10g vegan vanilla protein powder (linked is the one I use. Code ‘VEGAMBS’ will also get you 10% off sitewide)
1 tbsp milled flaxseeds
30g medjool dates, pitted
1 tbsp cacao powder
1 shot of espresso or 1 tsp of coffee granules dissolved in a splash of water
Yoghurt Ganache
50g vegan greek-style plain yoghurt
10g vegan vanilla protein powder (linked is the one I use. Code ‘VEGAMBS’ will also get you 10% off sitewide)
1 shot of espresso or 1 tsp of coffee granules dissolved in a splash of water
Instructions
Pre-heat the oven to 190ºC, fan
Place all the baked oats ingredients into a small blender and blend until smooth. NOTE, if your dates are slightly hard, soften them in some boiling water before blending, to ensure your mixture comes out smooth
Pour into an oven-proof dish, and bake for roughly 15 minutes, or until cooked through the centre
Whilst you are waiting for your oats to cook, begin to make your yoghurt ganache by mixing all of the ingredients in a small bowl until smooth and thick
Once your oats have cooked, remove them from the oven and spread on your yoghurt ganache.
Tuck in and enjoy! P.S you can batch prep these and eat them both cold and warm. Just pop them in an airtight container in the fridge, they will stay fresh for 4-5 days. If you do batch prep, however, you may need extra time in the oven as it will take longer to cook through a larger amount.
