The Creamiest Vegan Choc Banana Overnight Oats.


If you think you’ve mastered your overnight oats already, then think again because I promise you these oats are a game changer. It’s essentially a thick and creamy banana and chocolate smoothie poured over jumbo oats, which when left overnight, become soft and saucy but still with a delicious bite.

Serves: 1 | Total Cooking Time: 10 minutes + Overnight

Ingredients

  • 1 ripe banana

  • 1 tbsp cacao powder

  • 15g smooth peanut butter

  • 125ml plant-based milk of choice

  • (optional for a higher protein breakfast) 15g unflavoured brown rice protein powder

  • 50-60g jumbo oats (you can use regular porridge oats but jumbo oats taste much better here)

Instructions

  1. In a blender, place your banana, cacao powder, peanut butter, protein powder - if using, and plant milk. Blend until smooth.

  2. Place your oats in a jar or bowl and pour over the smoothie mixture. Stir until well combined and all the oats are coated.

  3. Place in the fridge overnight to allow the oats to absorb the smoothie mixture, thicken and become extra creamy.

  4. Serve cold in the morning and topped with your favourite oat toppings, or just eat plain! PS. Feel free to prep multiple of these for the week.
