Banana & Choc Chip Oat Bars.


If you’re a breakfast bar fanatic like I am then you are going to love this recipe. Super quick and simple to make - literally just throw everything in a bowl and then leave in the oven. Also just the right amount of sweetness, packed with good-for-you nutrients, and free from hidden nasties that pre-packaged bars can sometimes contain. FAB!

Serves: 10 | Total Cooking Time: 30 minutes

Ingredients

  • 20g ground milled flaxseed

  • 80g ground almonds

  • 1 banana (roughly 100g), mashed

  • 100g jumbo oats (gluten-free if needed)

  • 40g cacao nibs (or vegan dark chocolate chips, or try half & half)

  • 50g maple or date syrup

  • 50g smooth peanut butter (or almond butter)

  • 20g vegan vanilla protein powder (gluten-free if needed)

  • 50ml unsweetened plant milk (I used almond)

Instructions

  1. Line a thin baking tray with parchment paper and pre heat the oven to 160ºC, fan.

  2. Mash the banana on a plate with the back of a fork.

  3. Place all the ingredients, including the mashed banana, into a large bowl and mix well with a spoon until fully combined.

  4. Place the mixture into the baking tray and flatten down until you have a smooth surface.

  5. Place in the oven for 20 minutes, or until golden. Allow to fully cool down and harden before trying the slice into 10 bars.

  6. Store in the fridge, in an airtight container, for up to a week! Enjoy! x
