Mint Matcha Energy Balls (vg)


Everyone loves a no-bake desert or snack and these matcha energy balls are going to have you hooked! They couldn't be easier to make with only 4 main ingredients and an optional cacao coating. Perfect for on the go or a quick bit of fuel before a morning gym session.

Serves: 12 | Total Cooking Time: 10 minutes

Ingredients

  • 200g medjool dates, pitted

  • 1 tsp matcha powder* (Code: AMBRD can get you 20% off)

  • 100g unsalted cashews

  • 30g fresh mint

  • Cacao powder* to coat

Instructions

  1. Place everything into a food processor * and blitz until well combined and sticking together. This can take a minute or so.

  2. Remove from electricity and then remove the blade from the food processor.

  3. Take even-sized handfuls of the mixture and roll into balls using the palms of your hand.

  4. Pour some cacao powder onto a plate or in a bowl. Take each energy ball, one by one, and roll around in the cacao powder to lightly coat the surface.

  5. Place the energy balls in an air-tight container and keep in the fridge for up to a week.
