Easy Wholemeal Scones


Serves: 6 | Total Cooking Time: 15-20 minutes

Ingredients

  • 150g ground almonds

  • 150g wholemeal spelt flour

  • 2 tsp apple cider vinegar

  • 1/2 tsp bicarbonate of soda

  • 2 tsp baking powder

  • 1 tsp vanilla extract

  • 1 tbsp syrup of choice

  • 150ml unsweetened almond or oat milk

  • Large sprinkling of raisins or preferred dried fruit (or even chocolate chunks!)

Instructions

  1. Line a baking tray with parchment paper and pre-heat the oven to 180ºC, fan.

  2. In a large bowl and using a spoon, mix all the dry ingredients together. Then create a small hollow in the centre of the dry ingredients and pour in all of your wet ingredients. Mix well until everything is fully combined.

  3. Add in your raisins or dried fruit of choice and mix again.

  4. Take your dough and divide into 6 equal sized parts (or you could do 4 larger parts if you want bigger scones).

  5. Roll the dough in your the palm of your hands until they are the shape of a smooth ball. Lay them down spread out on the baking tray and lightly press them down 1cm or so using your hand again.

  6. Bake in the oven for 12 minutes, or until slightly golden on top. Remove from the oven and let them cool slightly before attempting to slice them.

  7. Once cooled, you can spread on your desired toppings and enjoy! If you want, you can easily store these in the fridge or freezer, and either enjoy cold or to enjoy warm, simply microwave for 20 seconds or so.
