Vegan Chocolate PB Protein Bites


These Chocolate PB Protein Bites were the OG when I first turned vegan and I still love them just as much today as I did back then and I am SURE that you will too! An utterly delicious sweet blend of caramel-y Mejdool dates, rich cacao, hearty wholegrain oats, smooth & creamy peanut butter, buttery cashews, almond milk and the all important plant-protein powder to absolutely jam pack this cute little energy ball with mighty nutritional goodness.

Serves: 20 | Total Cooking Time: 20 minutes

Ingredients

  • 20g cacao powder

  • 20g oats or oat flour

  • 50g unflavoured brown rice protein powder

  • 50g smooth or crunchy peanut butter

  • 150g pitted Medjool dates

  • 25g unsalted cashew nuts or roasted peanuts

  • 120ml unsweetened almond milk

    Optional Toppings

  • 20-30g vegan chocolate

  • Handful of crushed toasted peanuts

  • Pinch of flaked sea salt

Instructions

  1. If your dates are rather tough and dry, pre-soak the dates for 5 minutes in hot water. Discard the water, then remove the stone.

  2. Place all the ingredients into the food processor, proving yours is fairly powerful and durable. If it isn’t then not to worry. Simply break the stages up, so start by blending up your dates, then add in the remaining ingredients one-by-one blending after each addition. Blend, until the mixture transforms into a crumbly dough. Use your fingers to test whether the dough sticks together by pressing a bit of the mixture together in your hands. If the mixture is too dry, then add 1 tbsp plant-milk and repeat this step.

  3. Take out small bits of the dough and roll them into a ball with the palms of your hands. If you want to make nice, even sized balls then usually my mixture averages around 30g per protein bite, which ends up making 20, so feel free to use this figure as a reference guide when weighing them out.

  4. Place your protein bites onto a tray or plate and melt down your vegan chocolate for 1 minute in the microwave. Drizzle the chocolate over the bites and top with some crushed peanuts and flaked sea salt.

  5. Leave in the fridge to set and firm, and enjoy them cold. Store them in an airtight container for up to one week (they taste better & better the longer they stay in the fridge too!)
