Vegan Chocolate Peanut Butter Protein Bars


Serves: 6 bars or 12 bites | Total Cooking Time: 10 minutes + time to set

Ingredients

  • 150g smooth unsalted peanut butter* see notes

  • 50g oat flour OR vegan vanilla protein powder if you want this snack to be more of a protein bar* see notes

  • 70g maple syrup

  • 1 tsp vanilla extract** see notes

  • 100g plain vegan milk chocolate

  • Sprinkle of sea salt

*Depending on the type of peanut butter you use, you might need more oat flour / protein powder to create your mixture. This is because some peanut butter can be more runny/oily, and some can be quite dense and thick. If you are using a runny peanut butter, you might need more oat flour/protein powder. My recommendation is to just play it by ear and add in little bits in increments until you reach your desired texture.

** if you are using vanilla protein powder, you won’t need this

Instructions

  1. In a large bowl and using a spoon, mix 100g of the peanut butter with the maple syrup and vanilla extract, if using, until smooth.

  2. Add in the oat flour (or protein powder), and mix again. It might seem quite dry at first, but keep mixing well with your spoon and it will eventually come together. If you have a food processor, you could also use this rather than mixing manually.

  3. Line a square tin or lunch box with parchment paper and place in your doughy mixture. Press down firmly with the back of a spoon or spatula to smooth it over.

  4. In a microwaveable bowl or cup, melt down your vegan chocolate for 30 - 60 seconds, stopping to check and mix it every 15 seconds and ensure it doesn’t burn. It may not need the full minute as every brand of chocolate is different, so once the chocolate has melted nicely, stopping cooking and move on to the next step.

  5. Take the remaining 50g of peanut butter and mix in with the melted chocolate until smooth.

  6. Pour the peanut butter chocolate on top of the dough mixture and sprinkle over a pinch of sea salt.

  7. Leave in the fridge or freezer to set, then once the chocolate layer has hardened slightly, lift out the slab from the tub and place on a flat service. Using a sharp knife, cut into square bites or rectangle bars.

  8. Leave in the fridge for up to one week, and you my friend, have yourself the perfect afternoon snack or dessert!
