Vegan Sun-dried Tomato & Basil Hummus


Creamy and bold hummus made with soft butterbeans instead of the typical chickpeas. This colourful dip mixes the rich taste of sun-dried tomatoes with fresh basil and silky tahini, giving it that signature velvety texture as well bold Italian flavours. Serve with warm pita, crunchy veggies, or on sandwiches for a truly delicious lunch or snack.

Serves: 2 | Total Cooking Time: 10 minutes

Ingredients

  • 1x 400g can of butter beans, drained and rinsed

  • 1/2 jar of sun-dried tomatoes, drained

  • 20g tahini

  • 1 tbsp tomato puree

  • 1 handful of fresh basil

  • 1/2 tsp smoked paprika

Instructions

  1. Place everything into a powerful blender and simply blend until smooth!

  2. Use as a spread, dip or dressing. Store in an airtight container or jar in the fridge.
