Vegan No Yeast, No Knead Wholewheat Pizza.
Love pizza but can’t knead dough to save your life, or don't have the time to wait 2+ hours for your dough to rise? Same. This pizza base literally needs no more than two main ingredients, plus two that you probably already have in your cupboard. As the recipe name suggests, you also don’t need to knead anything or wait for anything to rise. And as for the cashew cheese, it again just requires 3 ingredients and 2 minutes.

Serves: 2-4 | Total Cooking Time: 30 minutes
Ingredients
250g wholewheat self-raising flour (or swap for a self-raising gluten-free flour)
250g thick plain vegan yoghurt (I used Alpro plain greek style)
2 tbsp olive oil
Pinch of salt
Cashew Cheese:
30g raw unsalted cashews
20g nutritional yeast
50ml luke-warm water
To decorate the pizzas, you can use whatever you like, but I used:
4-5 tbsp tomato puree
2 large handfuls of sliced baby tomatoes
Handful of spinach
Handful of fresh basil
Cashew cheese (ingredients below)
Instructions
Pre-heat the oven to 160ºC, fan.
Place the pizza base ingredinets into a large bowl and mix until combined. You may want to use your hands here to help.
Place the dough into a ball and onto a lightly floured surface. Use a knife to divide the dough ball into 2 or 4.
Roll each division to their own ball and then roll out each one to your desired thickness with a rolling pin and transfer onto a baking tray.
Prepare your cheese by blending the chasew cheese ingredients into a small high speed blender until smooth. Then place in the microwave for roughly 1 minute. The sauce will bubble and rise, and thicken into a sticky thick sauce.
Begin to decorate your pizza with your desired toppings (e.g. tomato puree, pesto, veggies and herbs) and spoon the cheese sauce onto the pizzas in small blobs, like mozzarella.
Place into the oven for 15 - 20 minutes, or until everything has cooked nicely.
Serve warm or keep in the fridge and eat cold the following day. You can also prepare the bases and freeze them, ready to be decorated another time. Enjoy!! :)
