Vegan Smoky Beans on Toast.
Name a better comfort food than beans on toast? I’ll wait. Well now you can make your own! These beans are deliciously soft with that all-important bite and a hint of heat. Super simple to make and ready in no time.

Serves: 4 | Total Cooking Time: 25 minutes
Ingredients
1x 400g tin tinned chopped tomatoes
1x tin of borlotti beans, drained & rinsed
1 tsp ground cumin
1 tsp of ground paprika
1/2 tsp ground chilli powder
1 small onion, sliced
2 garlic cloves, chopped
1 tsp Apple cider vinegar
1 tbsp tamari
2 tbsp tomato purée
1 tbsp maple syrup
Salt & pepper to taste
Serve with:
1/2 avocado (optional) per serving
2x slices of wholegrain sourdough bread per serving
Squeeze of lemon or lime juice
Instructions
Heat up a frying pan on medium heat and cook your garlic and onion for about 5 mins, until soft.
Add in your spice mixture and shortly after, add in all remaining ingredients (minus the avo & toast of course)
Add a splash of water and bring to a simmer, then leave and allow the sauce the thicken (takes approx 10 mins)
Toast your bread and prepare you avocado. Then spoon your beans on top! Serve with herbs of choice and a sprinkle of pepper.
