Vegan Pizza Sandwich


Who doesn’t want pizza for lunch - but not just any pizza, a whole food, plant-based pizza. Yes, that’s right! This pizza is made from solely whole-foods and tastes completely delicious. Now there’s no excuse why you can have pizza everyday.

Serves: 2 | Total Cooking Time: 25 minutes

Ingredients

  • 200g firm smoked tofu, sliced lengthways and thinly

  • 2 tbsp tomato puree

  • 30g unsalted cashews

  • 17g nutritional yeast

  • 1/2 garlic clove

  • Wholegrain sourdough bread (enough slices for 2 sandwiches)

  • 1x beef tomatoes, thinly sliced

  • Fresh basil

Instructions

  1. Start by soaking your cashews in boiling water and pre-heating the oven to 180ºC, fan.

  2. Whilst they are soaking, lay out your tofu slices onto a baking dish, trying to prevent them overlapping and place in the oven for 7-10 minutes, flipping them half way - you can also pan fry these, which is a little quicker.

  3. Whilst your tofu is cooking, begin to make your cheese sauce. Drain your soaked cashews and place into a small blender along with the garlic and nutritional yeast, as well as 30ml water. Blend until smooth - you may need more water as you go to help the blending. However, be cautious not to add to much as you dont want the cheese sauce to be watery and runny.

  4. Now you can begin to assemble the sandwich! Lay out your 4 slices of bread flat on a baking tray or grill rack. On two of the 4 bread slices, smooth on 1 tbsp of tomato puree, followed by your tofu, some sliced beef tomatoes and fresh basil.

  5. On the following two bread slices, spread on 1-2 tbsp of cheese sauce.

  6. Bake for roughly 5-10 minutes, or until your pizza toppings and bread have begun to crisp.

  7. Remove from the oven, bring together two opposite slices to make your sandwiches, and enjoy!
