Vegan Vanilla Chai Pancakes


A twist on my classic banana oat pancakes which is already a favourite of mine, so to give it an upgrade makes it even more irresistible. Moist and fluffy textures combine with sweet and candy-like flavours, all packed in one tall pancake stack. Top these pancakes off absolutely anything you like, but you can’t go wrong with freshly sliced bananas, maple syrup and cashew butter.

Ingredients

  • 1/2 banana

  • 1/2 tsp maca powder (optional)

  • 70g oat flour/ ultrafine oats

  • 20g vegan vanilla protein powder (linked is the one I use Code ‘VEGAMBS’ will also get you 10% off sitewide)

  • 1 vanilla chai tea bag (I used Tesco Finest vanilla chai tea)

  • 150ml unsweetened almond or oat milk

  • 1/2tsp ground sweet cinnamon

Instructions

  1. Place the milk into a microwaveable mug. Microwave for two minutes & then stir in the tea bag, just as you would in tea, until the bag is completely drained and milk has turned a beautiful caramel colour.

  2. Place the vanilla milk, flour, protein, banana & cinnamon into a blender and blend until smooth. Alternatively you could always just mix thoroughly in a large bowl until as smooth as can be (mash the banana first though).

  3. Heat up a frying pan on medium - high heat & neatly pour the mixture in mini circles or large one, depending on the szie you want your pancakes to be.

  4. Wait a few minutes before flipping over. You will know it’s time when the edges of the pancakes begin to change colour slightly and the surface begins to bubble a little.

  5. Flip over and repeat the cooking time. Transfer onto a plate and enjoy! It’s as easy as that.
