Vegan Falafel Flatbread with Tzatziki


Falafels were one of the first things I tried making when I turned vegan - I had never tried them before, but I absolutely fell in love! The doughy texture, with a punch of flavour, and can be paired with pretty much anything and still taste amazing… including this high-protein take on a tzatziki sauce, encased between a soft bed of flatbread. A truly perfect meal to spice up your regular lunch routine.

Serves: 5-6 | Total Cooking Time: 35 minutes

Ingredients

  • 2x tins of chickpeas (or other white bean) - roughly 480g when drained

  • 2 tsp dried parsley

  • 130g white onion, chopped

  • 4 garlic cloves

  • 20g plain flour

  • 3 tsp ground cumin

  • Sprinkle of salt

  • 1 tsp ground corriander

  • 1 tsp ground cayenne pepper (optional for some heat)

  • 1 tbsp smooth light tahini

For the Tzatziki

  • 150g cucumber, grated

  • 300g silken tofu

  • 1 garlic clove (optional)

  • 15g fresh dill (or can sub for 2 tbsp of dried dill)* alternatively, you can use 15g of fresh mint

  • Pinch of salt and pepper

  • 30ml lemon juice

Other:

  • 5-6 greek style flatbreads or kebab wraps

  • Fresh lettuce, and cherry tomatoes

Instructions

  1. Start by making your falafels. Place all your ingredients into a food processor and pulse until well combined and relatively smooth. If your mixture isn’t coming together and won’t stick well, then add a splash of water until it become slightly sticky enough to hold ion your hands

  2. Roll your mixture into golfball-sized balls and place on a lined baking tray. Bake in the oven at 200ºC, fan for 20-25 minutes, turning halfway. You want your falafels to be golden brown on all sides. Alternatively, you can fry your falafels!

  3. Whilst your falafels are cooking, start making your sauce. Place all the ingredients in a small, high speed blender and blitz until smooth - again, if your blender needs a little extra help, then just add a splash of water, oil, or plant-based milk to help it along.

  4. Now, all that is left to do is assemble! Place your flatbreads out flat, and spread on some of your sauce. Then add in 2-3 falafels, along with some lettuce and sliced cherry tomatoes.

  5. Fold up and enjoy!
