Kidney Bean & Rice Burgers


These plant-based bean burgers are unlike any plant burger I’ve ever had. I know I’m biased but everything from the texture to the amount they fill you up is just insane. The addition of kidney beans create a perfectly soft and dense feel, while the red rice add a gorgeously contrasting chewy bite - not to mention an abundant serving of fibre, protein and vital vitamins and minerals. These burgers have everything you need and nothing you don’t.

Serves: 4 | Total Cooking Time: 40 minutes

Ingredients

  • 2 red onion, diced

  • 15g miso paste

  • 1 tsp smoked paprika

  • 1 tsp chilli powder

  • 80g uncooked red rice (170g cooked) - regular wholegrain rice is also fine

  • 300g cooked kidney beans (or black beans)

  • 50g oats (or plain flour) *gluten free as needed

Instructions

  1. Cook the red rice according to the packet instructions.

  2. Heat up a frying pan on medium heat and fry the onions in a saucepan until slightly brown and caramelised.

  3. Place the oats into a food processor/blender and blend until they resemble a flour.

  4. Discard the water from the cooked rice, then place all ingredients into a food processor, including the pan-fried onions and blend until sticky.

  5. Remove the food processor from electricity and use your hands to scoop out 4 large burger patties. Mold the burger dough into four, 1 inch thick, circles.

  6. Place each burger patty back into the frying pan on medium heat for roughly 4 minutes on each side, or until charred and crispy. You can also bake these at 180ºC fan for roughly 15-20 minutes, filling them over half way, or grill them!

  7. Serve on wholemeal burger buns, with your choice of toppings and condiments (I love sliced beef tomatoes, fresh iceberg lettuce and sliced avocado).
